Kimchi Fried Rice Poke Style

Poke Salmon, Chicken,Bacon, Ceviche. and Kimchi Fried Rice, All in one bowl!

My friend Diego Law shared with me his kimchi fried rice recipe! This recipe is special because it is not just kimchi fried rice but it is a Poke too!! A masterpiece combination of flavours and a filling meal.

Ingredients List:

Soy Sauce

Sesame oil

Scallion

Kimchi

Seaweed

3 Cloves of Garlic

1 Lime

1 Lemon

Rice (desired Qty)

Butter

Cilantro

Black pepper and Salt to taste

3 eggs

optional:

Bacon

Chicken

Calamari

Shrimp

Preparation Method:

1. Add water into a pot and bring it to boil. Add Calamari into the boiling water for 3 min and shrimp for 1 min. When removing calamari and shrimp from the pot, refresh in cold water. Place them on a container covered with lemon and let it marinate.

2. Kimchi fried rice:

Mince the cloves of garlic and chopped scallions and place them in a small pan with oil. Heat gently until warmth and add rice into the infused oil. Let the rice toast (while letting the rice toast, move over to step 3 if desired), when it gets crispy add kimchi and mix it all together.

3. Additional ingredients

Prepare and cook chicken in form of stripes if desired. Cook eggs and bacon separately with a bit of sesame oil (the type of oil is optional and cut the bacon in small squares). When done, remove bacon from fat, and place eggs on the pan with rice.

Serve the bowl:

On the bottom: Add kimchi fried rice.

Top it with chicken fajitas, a portion of salmon, add bacon, shrimp and calamari marinated in lemon.

For Garnish :

Cilantro and lemon zest
